What cabbage microgreens taste like
Mild sweet cabbage without any of the sulphur you get from a mature head. The stems run pink to deep magenta depending on the variety and the light, which is why chefs order it — one of the few greens that adds colour without adding a strong flavour to manage.

Questions about cabbage
Why are the stems pink?
Anthocyanins — the same pigments that make a red cabbage red. How vivid they get depends on the variety and the light the tray grew under, so the colour varies a little week to week. It has no effect on the flavour.
Can I use cabbage microgreens for slaw?
Yes, and it is one of the better uses, but dress it right before serving. Microgreens are far more delicate than shredded cabbage, so an acidic dressing will wilt them within minutes rather than over hours.
