Is arugula microgreen spicier than regular arugula?
It is more peppery and less bitter. The heat is concentrated because the plant puts its defence compounds into the first leaves, but the bitter notes that develop in a mature plant are not there yet. Most people find it more pleasant, not less.
How much arugula microgreen do I use?
Less than you think. A small handful finishes two plates. Treat it the way you would treat black pepper or a hard cheese — an accent that changes the dish, not a volume ingredient you fill a bowl with.
