Sunflower shoots are the substantial one — thick paired leaves, a satisfying snap, and a nutty sweetness closer to a raw sunflower seed than to a leafy green. They are the variety most likely to be eaten by the handful before it reaches a plate.

Questions about sunflower

Why are sunflower shoots thicker than other microgreens?

The seed is large and carries a lot of stored energy, so the seedling puts up a substantial stem and two thick cotyledons instead of the fine stems you get from brassicas. That is what gives them the crunch and the shelf life.

Do I need to remove the seed hulls?

We take off what we can when we cut, but the odd black hull gets through. They are harmless — pick them off if they bother you. On a living tray, brushing a hand across the top before you cut knocks most of them loose.
