Why a living tray beats a clamshell

A clamshell of microgreens starts dying the moment it is cut. You buy it Tuesday, you forget it Wednesday, and by Friday it is a wet green disappointment in the back of the fridge. A living tray does not have that problem, because nothing has been cut yet. Nothing wilts, nothing gets thrown out, and the greens on your plate were alive ninety seconds ago.

How it works

  1. Order. Pick a one-off tray or a weekly subscription.
  2. We deliver. Tuesday through Saturday across the Charleston area, or collect from us at a market.
  3. Keep it on the counter. Indirect light, a splash of water in the base tray every day or two. That is the whole job.
  4. Cut above the soil line with scissors, as you need it. A tray keeps giving for one to two weeks.

Where to buy

We are a working farm, not a shop — there is no storefront to visit. There are three ways to get our microgreens:

  • Subscription. A standing weekly or fortnightly order, delivered across the Charleston area. The simplest option, and where most of our customers end up.
  • Farmers markets. Come find us in person around the Lowcountry and pick your own. Trays go fast, so come early.
  • Restaurants. We supply kitchens across the Charleston area. Chefs — call Derick on 843.212.6932 for a free sample tray and a standing weekly drop. If you want a variety we do not grow yet, name it and he will trial it.

Questions

How long does a living tray last?

One to two weeks on your counter, depending on the variety and how fast you cut it. Unlike cut greens, it does not degrade while it waits — it keeps growing.

Do I need to do anything to keep it alive?

Very little. Indirect light and a splash of water in the base tray every day or two. No feeding, no repotting, no fuss.

Where do you deliver?

Across the Charleston area — Johns Island, James Island, West Ashley, downtown, North Charleston and Mount Pleasant — Tuesday through Saturday.

How do I harvest it?

With clean scissors, cutting above the soil line. Always cut above the soil line — never pull the greens up with the roots attached.

Six pickup points a week, plus delivery across the Charleston area from our James Island base. Saturday at the Sea Island Farmers Market on Johns Island is the one where you can taste before you buy.
